So Many Soups
...the gazpacho is so fresh and spicy that it tastes like it's still growing in the garden. Alas, so many soups, too little time! Cheers! —Gene Arnould

Living and cooking here in Marblehead, we are fascinated by the rich heritage of our local and regional chowders. Cod, haddock, salt pork, and sea biscuits made up the early chowders. These simple one pot meals were staples for those who first lived here. They were easily prepared at sea as well, using ship’s provisions. Clams, like those at Deveraux, were at first only considered a “tolerably good” substitute for fish. It was later on that this tasty surf clam gained the popularity it enjoys today. 18th century recipes prepared for “captains of ships” called for “hot Madeira wine." Frugal colonial cooks replaced the wine with a simple tomato ketchup or a cup of beer…this was likely the beginning of a red chowder which was prepared and enjoyed at all points, from Narragansett Bay on up to Gloucester.
